The easiest most delicious recipe for green beans Serves: 2-4 Time: 8 min Ingredients: 1 lb, fresh trimmed green beans 1 Tbs butter Water Garlic salt, pepper Directions: 1. Add green beans to a large fry pan, add enough water so bottom is covered but green beans are not submerged, add butter and heat over high heat and cover 2. After about 6ish minutes, check fineness, you want them to be still al dente, the uncover and stir occasionally until water evaporates, add salt and pepper and toss Serve as a side, chop them up for your kiddos, or keep them in the fridge to snack on throughout the week. If you’re really in a pinch for time, consider steaming these in the bag in the microwave, then sauté the with butter, garlic salt, and pepper for a few minutes.
This side is very versatile and filling. They can be made in an airfryer, the oven, or my favorite the grill!
Serves: 4 Time: 20 min Ingredients: 1 pound brussel sprouts 2 Tbs olive oil Salt/pepper Directions: 1. Cut stems off brussel sprouts so some of the leaves start to come off and quarter them 2. Toss in the olive oil, salt, and pepper and either bake or air fry – if using oven 425 degrees and space on a baking sheet, stir around occasionally. If using air fryer 390 and toss/stir every 5 min Yum!
One of my favorite dinner sides are these smashed potatoes and I love dipping them in an herby ranch style dressing.
Serves: 4 Time: 45 min Ingredients: 12 ounces baby Yukon gold potatoes 3 Tbs olive oil Salt and pepper Cayenne Directions: 1. Fill a large saucepan with potatoes and water, ensuring water is at least 1 inch above potatoes. Add a dash of salt and heat over high heat. Continue boiling for about 20 minutes. Potatoes should be fork tender 2. Preheat oven to 425 3. Drain potatoes in colander and let them cook about 5 minutes 4. Grease a sheet pan with olive oil and arrange potatoes on sheet, use a fork or potato masher to smash each potato about 1/4-1/2 inch thick, drizzle olive oil, add salt/pepper and a small amount of cayenne. Bake for 25 minutes until browned This is a great base recipe, feel free to season with any and all herbs and seasonings. Serve with a dipping sauce like ranch or simply as a side with your dinner🤩
The perfect addition to soups and bruschetta Serves: as many as you want to make Time: 15 min Ingredients: Your favorite crusty bread, sliced Olive oil Salt Pepper 1 clove of garlic Directions: 1. Preheat oven to 375, while preheating, arrange bread on a baking sheet then paint each slice with olive oil (crust to crust), season each slice with salt and pepper. Flip them over and repeat 2. Bake for 12 minutes then broil on hi til light golden brown 3. Remove from oven, slice the garlic in half and rub each slice of toast with the garlic Enjoy!
Decadent Melt in your Mouth Goodness Serves: 4 Time: 35 min Ingredients: 6-7 large Yukon Gold Potatoes 2 Tbs vegetable oil 3 Tbs butter 1 cup vegetable broth 4 cloves garlic, smashed 1 sprig rosemary Directions: 1. Pre heat oven to 400 degrees, while the oven is preheating melt together oil and 2 Tbs of butter over medium high heat in a large cast iron skillet 2. While the oil and butter are melting cut 1inch thick discs from the potatoes, season both sides with salt and pepper 3. Place potatoes in skillet and sear for about 4-5 minutes, they should be golden-dark brown, once they are, turn off heat and flip over each disc 4. Add smashed garlic, rosemary, veggie broth, and butter, place skillet in oven to finish and bake for about 30 minutes Once I get these in the oven I usually pick a 30 min meal to go with them.
